Bacon is a cured meat made with the belly of the pig whose parts are squared and trimmed. After this, the meat is salted and, subsequently, aged from fifty to sixty days. This procedure is always done manually as dictated by our family tradition. It’s a real delicacy best enjoyed with grilled polenta or toasted bread, sparkling red wine and gorgonzola.
All cold cuts are hand-tied with the use of animal-derived bowels.
